Sweet Potato Waffles

The Sweet Potato Waffles are done and are currently taking turns on sheet pans in the freezer. Once they're all frozen, they'll get stored in a zip-top freezer bag 'til Sunday morning.

I couldn't find a recipe for vegan sweet potato waffles, so I had to get creative. I started with the Banana-Nut Waffle recipe from N'con (because we've made it a lot and know it's a solid recipe) and made the following adjustments:
  • replaced 2 average-size bananas with 2/3 cup sweet potato puree 
  • increased nutmeg to 1/2 teaspoon
  • replaced walnuts with pecans
They came out perfect! This planning ahead thing is nice. Plus crossing items off To Do Lists feels pretty great. So, here goes...
  • Sweet Potato Waffles with Maple Cream
  • Mac n' "Cheese"
  • Baked Apples
  • Toasted Brown Rice Tea
  • Winter Solstice Cocktail
Hooray!  Oh, and that's our tree in the background of the photo above.  Isn't it pretty?  I'll try to post more pictures of it soon.

i see your tree peeking around those waffles of yumminess! ooooooooh, yay! :) i have yet to make waffles as a vegan - and i think i'm gonna have to give your sweet potato waffles a go. i especially love that you've got some pecans in 'em. soooo scrumptious - and they look perfect, Marni!
