Sunday Night Dinner: Roasted Root (Veggies)

It's been a while since I've posted a Sunday Night Dinner entry and I'm happy to bring it back! We had a fabulous but simple supper tonight: oven-roasted beets, taters, carrots, onions, and garlic with fresh rosemary from the garden, olive oil, salt and pepper. We served it over the last of the leftover millet from Thanksgiving and noshed while watching Iron Chef America.  It was a Cora V. Symon Holiday Battle complete with oversized glass ornaments.  Oooooo, shiny.

The secret ingredient was .... CHOCOLATE!!!!!!

Yum! I just finished off the last of my roasted root veggies from Thanksgiving, but I just realized I forgot to put beets in!

roasted beets = my favorite! and to think - i used to abhor beets! what was wrong with me?! stupid untrained taste buds! ahahahaha! your root veggies look perfect, Marni! and hooray for Iron Chef America! i miss that show! makes me wish we had cable tv again. 'cause cooking shows = the best!

i watched that last night, too! i thought it was super interesting, but ALAS! michael switched it to a football game for a minute and we missed the WINNER! you must tell me who won. post it in my comments please please!

and your veggies look fabulous. i miss beets. they're expensive here. which seems dumb to me. root veggies should be like, the cheapest veggies on the planet.

Chelsea - Argh! Gotta get those beets in! Luckily they keep for quite a while in the fridge. :)

Sal - Right? There's something real old-school, back-to-basics about simple meals like that.

Jessy - I used to not like beets, too. So hooray for maturing taste! As for cooking shows, I heart them too. But I sure do wish the Food Network would get brave and have just ONE vegetarian/vegan cooking show. C'mon now.

Tami: Thank you! I really love roasting, too. Brings out the best in even the saddest of veggies.

Melisser: That's good to know. She seems nice on TV, but you can never really tell. I noticed she's got a recipe in a new vegan cookbook I saw last time I was at the store. I think it was called Great Chefs Cook Vegan.

Roasted Veg is awesome - I've never tried roasted beetroot though!!
I will rectify this soon!

Jeni Treehugger: Roasted beets rock. It's also really easy to slip the skins off of them after they've been roasted. :)
