I couldn't find a recipe for vegan sweet potato waffles, so I had to get creative. I started with the Banana-Nut Waffle recipe from N'con (because we've made it a lot and know it's a solid recipe) and made the following adjustments:
- replaced 2 average-size bananas with 2/3 cup sweet potato puree
- increased nutmeg to 1/2 teaspoon
- replaced walnuts with pecans
Sweet Potato Waffleswith Maple Cream- Mac n' "Cheese"
- Baked Apples
- Toasted Brown Rice Tea
- Winter Solstice Cocktail
Hooray! Oh, and that's our tree in the background of the photo above. Isn't it pretty? I'll try to post more pictures of it soon.
