I'm leaving for Denver, CO today. I'll be there 4 days and this will be the first trip I've taken since going vegan. Since I won't have access to a grocery or other outside food for the majority of my meals, I decided I need to create a little Vegan Travel Kit for myself.
I designed the kit around things I know I have access to - hot tea, salads, and fresh fruits. The rest is meant to fill in the gaps. I'm sure I'll be changing the components as I travel more, but I think this is a good start.
I've heard rumor that I may get to dine at a vegetarian restaurant in Denver while I'm there. If I do, I'll report back with all the details.
