Mmmm ... Memorial Day barbeque. I got all inspired by Vegan Dad's Grilled Citrus Tofu and Pineapple post last month and fired up the barbeque. We grilled citrus-glazed tofu, pineapple, asparagus, and mini peppers stuffed with whole cloves of garlic. Delicious!
We have a ton of leftovers and are planning on making some killer sammies with them. Next time, I think I'll add soy sauce and fresh crushed garlic to the marinade.
