We're having a casual get-together tomorrow for the Super Bowl and I'm trying to knock out most of the prep work today. In order to kick the weekend off right, we tried another recipe from the fantabulous
Vegan with a Vengeance by Isa Chandra Moskowitz: Pancakes with the Blueberry variation. Yum! Not only does this recipe go together super fast, with ingredients that pretty much every vegan kitchen has on hand at all times, it's scrumptious, too. We had ours with maple syrup.
So now, I'm putting the final touches on my shopping list and I've got pinto beans relaxing in a warm pre-soak on the stove. They'll eventually manifest as refried beans. My Super Bowl XLIII menu is Mexican-themed, and includes...
- Potato Skins stuffed with Mexican Rice n' Soyrizo
- Sour Cilantro Cream from V'con
- Nachos with Refried Beans and Cheeze Sauce
- Lime Meltaway Cookies
- Margaritas n' Beer
Oh, and in case you're interested, we're rooting for Arizona. Go Cardinals!
