Caramelized Corn with Shallots

Another veganized Martha Stewart recipe. This one's from her Healthy Quick Cook book. I especially like this book because the recipes are organized by season and further grouped into menus. Also, as the name implies, they are all healthy and easy to prepare.

Caramelized Corn with Shallots
Serves 4 as a side dish
  • 1 tablespoon vegan margarine (I use Earth Balance)
  • 4 ears of fresh corn, kernels cut from the cob (about 3 cups)
  • 4 large shallots, cut into 1/4-inch slices
  • Pinch of sugar
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh thyme leaves
  1. In a large skillet over medium heat, melt the margarine. Add the corn, shallots, sugar, salt, and pepper. Cook, stirring occasionally to prevent burning, until the corn is caramelized, about 5 minutes. Stir in the thyme and cook 5 minutes more. Season with salt and pepper.
This simple recipe is sweet, crunchy, and delicious. The caramelization of the corn further enhances its innate sweetness while the shallots balance it out with their delicate and savory flavor. The thyme adds a freshness to the whole thing.
